![]() Sear the halibut until cooked medium to medium-well (being careful not to overcook and dry out the halibut). Place a large skillet over medium-high heat. Season the fillets generously on both sides with taco seasoning and salt. Pat the halibut fillets dry with paper towels. In a medium bowl, gently stir together the mango, avocado, red onion, cilantro, and lime. Season to taste and add more milk as needed until the crema can be drizzled. In a small bowl, stir together the sour cream, lime juice, milk, taco seasoning, and hot sauce until smooth. I just wouldn’t recommend flour tortillas here. However, this recipe is also excellent on freshly fried and salted corn tortillas, either as tacos or tostadas. (If your corn tortillas are fragile, double them up as pictured). For the corn tortillas, I like them steamed or warmed in the pan until pliable and soft for fish tacos, as is traditional. A couple of quick notes… to season the halibut, I use homemade taco seasoning – a mixture of chili powder, cumin, garlic powder, and salt. To prevent halibut from tearing apart, slightly nudge the steak with your spatula to make sure it is not sticking to the pan. We cooked ours in a cast-iron skillet and added more olive oil to the pan to help prevent sticking. Our steaks were pretty thick, so we cooked the first side over medium heat for about 4 minutes and then flipped over to the other side for about 3 minutes. No Chef help on this one, we found a couple of recipes on line that we liked and combined them for what we believe is an outstanding meal and it was very easy to prepare as well. Deborah found a couple of halibut steaks in the freezer we had forgotten about and suggested we cook them up, it took me about 2 seconds to grab the cast iron skillet. It seems most of our time is spent in the field hunting but we do wet a line on occasion and the reward is well worth it. You may not know this but we love to fish, especially halibut in Alaska.
